How to use:

 Prepare Your Ingredients:

  • Ensure you have coarsely ground Vietnamese coffee ready. The grind should be a bit coarser than that used for espresso.
  • If you like your coffee sweet, prepare sweetened condensed milk.

Assemble the Vietnamese Coffee Filter (Phin):

  • The phin typically consists of a perforated insert that fits into the brew chamber, a screw-down filter press, and a lid.
  • Place the perforated insert on top of the glass or cup.
  • Add the desired amount of coffee grounds into the insert. The amount depends on your preference and the size of your phin.

Screw Down the Filter Press:

  • After adding the coffee grounds, screw down the filter press until it's snug on top of the coffee grounds. This helps to compress the coffee and control the brewing process.

Pour Hot Water:

  • Heat water to just below boiling (about 200F or 93C).
  • Pour a small amount of hot water (usually about 1/4 inch or 6 mm deep) into the phin to saturate the coffee grounds. Allow the coffee to "bloom" for about 20-30 seconds.

Add More Hot Water:

  • After the initial blooming, add more hot water to the phin until it's nearly full.
  • Place the lid on top to retain heat and steeping aroma.

Brewing Time:

  • The coffee will slowly drip through the filter into your cup. The entire brewing process usually takes 4-5 minutes. Be patient; the slow extraction is a characteristic of this method.

Serve:

  • If you're making traditional Vietnamese coffee, add sweetened condensed milk to your cup before the coffee finishes brewing.
  • Once the brewing is complete, stir the coffee and condensed milk together if used.
